Pine Nut Spinach Salad


6 oz organic baby spinach leaves
1/4 cup sun-dried tomatoes packed in extra virgin olive oil, chopped
1/4 cup dried cranberries
1/4 cup toasted pine nuts
1/2 avocado, diced
1/3 cup crumbled feta cheese
Add boneless skinless chicken breast if you wish
Toss all ingredients in large bowl

Optional Dressing (I really don't think it needs it)
2 tablespoons balsamic vinegar
2 teaspoons freshly squeezed lime juice
salt & pepper to taste
